Warm up this weekend with this hearty & delicious Chicken and White Bean Chili Recipe. Not only do we love this recipe for it's nutrient rich contents, but it's perfect for cooking in bulk for this week's meal prep. ⠀ ⠀ (6 servings, about 1½ cups each. 1 serving=2 Yellows, 1/2 Red) ⠀ ⠀ Ingredients⠀ 1 Tbsp. olive oil⠀ 2 medium onions, chopped⠀ 1 medium red bell pepper, chopped⠀ 2¼ cups raw cubed chicken breast (about 12 oz.)⠀ 4 cloves garlic, chopped⠀ 4 cups low-sodium organic chicken broth⠀ 2 cans (15-oz. each) cannellini beans, drained, rinsed⠀ 1½ tsp. ground cumin⠀ 1 tsp. chili powder⠀ ½ tsp. sea salt (or Himalayan salt)⠀ ½ tsp. ground black pepper⠀ 1 (4-oz.) can roasted green chiles⠀ Coarsely chopped cilantro (for garnish; optional)⠀ Instructions⠀ Heat oil in a large saucepan over medium-high heat.⠀ Add onions and bell pepper; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.⠀ Add chicken; cook, stirring frequently, for 4 to 6 minutes, or until no longer pink.⠀ Add garlic; cook, stirring frequently, for 1 minute.⠀ Add broth, beans, cumin, chili powder, salt, pepper, and chiles. Bring to a boil. Reduce heat to medium-low; cook, stirring occasionally, for 20 to 25 minutes.⠀ Divide chili into 6 serving bowls; garnish with cilantro if desired.⠀ ⠀ #recipe #21dayfix

With the cold weather in full force, we know there's nothing better than an easy, hearty, warm meal you can serve up for dinner and utilize for your meal prep. Check out this savory Slow Cooker Beef Chili recipe that will leave you full and happy. ⠀ ⠀ (Makes 6 servings, about 1 cup each. 1 serving=1 Green, 1 Red, 1 yellow, 1/2 Tsp)⠀ ⠀ Ingredients⠀ 1 Tbsp. olive oil⠀ 1½ lbs. extra lean beef chuck, cut into bite-sized pieces⠀ 1 medium onion, chopped⠀ 1 medium green bell pepper, chopped⠀ 2 cloves garlic, finely chopped⠀ 1 (15-oz) can diced tomatoes, no salt added⠀ ¼ cup tomato paste, no sugar added⠀ 2 Tbsp. chili powder⠀ ¾ tsp. sea salt (or Himalayan salt)⠀ ½ tsp. ground black pepper⠀ 1 (15-oz.) can kidney beans, drained, rinsed⠀ Instructions⠀ Heat oil in medium nonstick skillet over high heat.⠀ Add beef; cook, stirring frequently, for 4 to 5 minutes, or until browned. Reduce heat to medium-high.⠀ Add onion and bell pepper; cook, stirring frequently, for 3 to 4 minutes.⠀ Add garlic; cook, stirring frequently, for 1 minute.⠀ Place beef mixture in a 3-quart slow cooker.⠀ Add tomatoes, tomato paste, chili powder, salt, and pepper.
